Killer Chipotle Chili
The smoky hot flavor of this chili is credited by the addition of chipotle chili powder. A chipotle chili is a very hot dried, smoked jalapeno. Its traditional heated flavor is used to spice up Southwestern and Mexican dishes. They are sold dried, pickled or canned in a vinegary sauce called adobo. Generally they are added to stews and sauces while the pickled variety are consumed as an appetizer
SERVES 12 , 1 big potful
2 lbs ground beef
2 (28 ounce) cans crushed tomatoes
1 (19 ounce) can kidney beans (with liquid)
1 (19 ounce) can black beans (with liquid)
1 (19 ounce) can garbanzo beans (with liquid)
1 cup diced onion
1 1/2 cups quartered cremini mushrooms
2 roughly chopped green peppers
1 roughly chopped red pepper
1 diced anaheim pepper
2-3 teaspoons cumin powder
3 tablespoons chili powder
1 teaspoon chipotle chili powder (or more if you like it hot ;-)
1 1/2 teaspoons black pepper
2 teaspoons salt
2 cups water
Brown the ground beef in a skillet over medium heat.
Drain off the fat.
In a large pot, brown mushrooms, onion, and peppers.
Add the drained beef, beans and spices, and bring to a simmer over low heat.
Cook, stirring every 15 minutes, for 2 to 3 hours.
